The name for this beer is a reference to the unique and delicious Vin Jaune wines of the Jura region in France. It started life as Belgian-style tripel, and after two years of maturation in dry sherry barriques it emerged as a light amber colored beer with strong oxidative notes of almond, hazelnut, and oak.

When the King was crowned, fans in his home town of Akron were excited and proud! But his departure left a sour taste in their mouths making Akron salty about losing their King, and wanting to forget. Now to honor his return and share these sour and salty feelings, we have brewed a beer to express these feelings in flavor, which was a nearly forgotten style itself! This rare Gose style beer is refreshingly sour and salty, and was nearly forgotten - now it's making a come-back, and so is our King!

A Belgian Flanders Style Red Ale refermented with a sweet blend of fresh whole Northwest cherries. This beer spent more than six months of lactic fermentation and aging in small French oak wine barrels before being hand-bottled.

In this case, our newest ward-winning product pays homage to our naughty neighbours to the south, as our American Pale Ale has something for everyone! For hop lovers, the huge aroma of citrus and pine greet the nose and the hops continue on the palate as hoppy flavour persists, leaving a remarkably easy drinking crisp, dry finish. We pack all this hop aroma and flavour in a brew that is only 4.9% on purpose, which leaves a hugely sessionable beer that is perfectly refreshing on hot summer days!

Blonde Ale with rice, cinnamon, vanilla bean. Our take on the traditional agua fresca incorporates rice and lactose along with spices for that sweet, creamy character that we've come to love.
The name derives from Valencian orxata, probably from ordiata, made from ordi (barley). Various false etymologies exist – one legend links the origins of the name to James I of Aragon, who after being given the drink for the first time by a local in Alboraya, was said to have exclaimed in Valencian "Açò és OR, XATA!" ("That's gold, darling!") .

Rich, malty flavors of caramelized and toasted grains dominate this strong Scotch ale. A hint of rye adds a crisp, Scotch-like, old-world beer character, reminiscent of a simpler life from centuries ago.

It's a rendition of an age old monastery beer, but we do it in the 8 Wired way. Brewed and dry hopped with NZ grown Styrian Golding Hops, fermented with a Belgian yeast and refermented with Brettanomyces.

Saison du Blé is the harmony of a fluffy Wheat Saison and a traditional, rustic Saison with Brettanomyces and Lactobacillus. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our house Saison yeast adds complexity and acidity. This farmhouse ale was aged in Chardonnay barrels and a Missouri Oak Foedre for several months.

Barrel Aged Double Flanders Red Ale

A not so traditional Farmhouse saison or ‘seasonal’ style beer brewed to develop complex fruitiness and acidity. Brettanomyces yeast is added, which over time diminishes the malt and hop character and accentuates the dry, fruity & spicy characteristics.

Traditional Belgian style Framboise. Red ale base was aged in Cabernet oak barrels and French oak foudres for more than 2 years. Added infusion of raspberries gives a sourness alongside the oak tones.

This semi-sweet mead is an ultimate expression of strawberries, honey and vanilla.

In a particular region of southern Belgium, the reserve or provision saison was called surette, meaning tart. Using time-honored techniques, our saisons employ old-world methods to restore complexity and the classical rustic character lost in modern day saison. Brewed with local Colorado floor malted barley, traditional harvest grains, and noble hops, Surette embodies old-world saison brewing traditions. Each batch of Surette is an expression of the large oak foeders it matures in while taking on an aged vinous quality and a complex tartness. Showcasing citrusy ripe fruits, a light zesty spice, and earthy undertones, Surette’s character exemplifies our mixed culture of Brettanomyces and souring bacteria.

We debuted Griffon Bruxellois in 2012 at a few of our events and it was quite a hit. It returns in 2017 - in bottles and on draft - from Bruery Terreux. This balanced, sour brown ale was aged in oak barrels with cherries, giving it a soft, tart fruit flavor to compliment the subtle dark fruit notes and gentle tannic complexity. Its ripe nature is tempered by its calming barrel-aged character. It not just a rewarding trip for the senses... it's a trip down memory lane.

Tart of Darkness is a traditional stout that we aged in used oak barrels from The Bruery that had previously housed beers such as Cuivre or Black Tuesday. We then brought them over to Bruery Terreux, added our special blend of souring bacterias and wild yeasts and watched nature take its course. The result is a perfectly tart yet awesomely dark and roasty, sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak.
