A double dose of vanilla derived from both fresh Bourbon barrels and the trio of Tongan, Ugandan, and Mexican whole vanilla beans is complemented by the essences of chocolate, caramel and molasses to round out this luxurious silky stout.

The rich and malty character of our Outta Kilter scotch style red ale is masterfully complemented by barrel aging, as the “angel’s share” slowly evaporates resulting in a wonderful concentrating of flavors. The full flavor experience goes one step further with the vanillin undertones from the oak wood of the barrel, adding a savory, satisfying depth of flavor, ultimately creating a wonderful sensory experience.

Cherry Hard Cider. Essential elements- Apple, cherry. Appearance - Deep pink and clear with a light, lacy head that quickly dissipates. Aroma - Crisp, clean apple cider, round, ripe tart cherry. Experience - Tart cherry sweetness up front with full, yet crisp fermented cider. Heavy apple skin compliments the cherry. Sweet, creamy honey rounds the flavor and balances the tartness of the cherry. Light carbonation lifts the flavor while the honey smooths the overall mouthfeel. Finishes crisp and clean.

Slumbering for 18th months, Ghosts in the Forest is a blend of beer from The Lost Abbey Oak Foeders and a few select French oak barrels. This blonde sour focuses on the complexity of Brettanomyces and oak. “When we first got these massive Foeders, we knew we were going to have to be patient and let the oak work it’s magic” said Tomme Arthur, COO and Co-Founder of The Lost Abbey. “We’ve since added 3 additional vessels, creating our own “forest” and we’re really excited to start to blending these beers into future creations.”

Bourbon barrel-aged for an immensely smooth character, yet a complex and substantial flavor. Made with our Baltic brewing friend Wojtek, a master of the style from Brewery Widawa in Poland. Pirating this awesome recipe from Baltic history, we created this crazy collaboration by getting all the traditional malts, lager yeast, and even hops fresh from his source in Poland! Then for distinct hop character. we increased the kettle aroma hops by 3x

La Roja is brewed in the Flanders tradition. We blend this beer from oak barrels where the beer has been aging for 12 months or longer.

Japanese for “love tea,” Aicha (eye-chah) is a merging of traditions from the Old World and the Orient. Aicha is a barrel-aged American Sour Ale fermented with Green Tea, Toasted Oolong Tea, and Jasmine from our neighbors at Dobra Tea (Asheville, NC). This lovely, local collaboration is more than the sum of its worldwide parts.

Working alongside our south Corvallis neighbors, Bespoken Coffee Roasters, we elevated our classic Nebula Stout with additional malt and a 24-hour cold extraction on washed Ethiopian Zonegediyo Gedeb coffee. Both varietal and roast profile were selected to complement the base beer with delicately fruity notes, moderate acidity, and a delightful aroma that seamlessly melds into our stout's rich chocolate and caramel roast character.

Blushing Monk is brewed with a ridiculous amount of raspberries and with a Belgian yeast strain that keeps our head cellar operator from sleeping for a week. It pours a stunning deep berry red and, at 9.2% ABV, has a surprising kick. The perfect dessert beer, it can be enjoyed on its own or paired with fresh cheeses, fruit, cakes and more.

Barrel Aged Dark Sour with Madcap Hunapu Coffee. We teamed up with our favorite local coffee roaster for this one to match the base beer with the perfect coffee. After trying 4 different options from Madcap, we agreed on their Hunapu roast from Guatemala. The coffee has notes of chocolate and citrus which blend perfectly with our base dark sour beer. 778 bottles produced.
