After running off the strongest wort from the mash into our kettle, we collected 12bbls of lower gravity ‘second runnings’ from the remaining mash into a transferable tote. This is a historical brewing technique called ‘parti-gyle’ brewing! The tote was taken to Little Fish where they added it to their kettle and brewed a Dark Mild Ale called, ‘Hit Clips’. What fun! 22 months after aging in New York AppleJack barrels, In the Neighborhood emerged.
