Story has it that when this dessert was first requested in a Barcelona restaurant by an American visitor to the city, there was no local name for it. Looking for a word with approximately the same sound in Spanish, the name Pijama - pyjamas in English - was born for a peach and raspberry ice-cream based dessert.
Rather than take sour or stout route commonly taken for "pastry beers", we opted for Blonde Ale as a base style with a Belgian yeast strain. The recipe essentially riffs off our first foray into pastry-style beers, ARROZ CON LECHE. This time, we turned our attention to another dessert: Peach Melba. Or, as it is known here, Pijama.
