Wild Ale Fermented in Oak with Raspberries and Blueberries
Primary fermented with our mixed culture of wild yeast, Sour Rosé undergoes fermentation in large oak foeders on second-use raspberries and blueberries. Showcasing bright effervescent characteristics, Sour Rosé is the perfect sour beer for all seasons and occasions. Unfiltered and naturally wild, we package each can with a small amount of yeast to maintain maximum freshness for wherever life’s adventures take you.
Paying homage to our favorite yeast, St. Bretta is fermented with our house mixed-culture of Brettanomyces. From its historic significance in old-world beers to this, the new age of Brett, we embrace this yeast as a focal point in our artisan brewery. A re-imagination of early farmhouse saisons brewed in Europe, St. Bretta combines fresh citrus characteristics with yeast-driven tropical fruit flavors and aromas. Unfiltered and naturally wild, we package each can with a small amount of yeast to maintain maximum freshness for wherever life's adventures take you.
Combining our brewery's super soft water, traditional floor malted barley and the finest German hops, this unfiltered keller pilsner is crushable. Brewed as a traditional European pilsner, this is what beer tastes like pouring from the wooden vats used to make lager beer for centuries.
American style IPA Built to showcase hop aroma and flavor, this juicy unfiltered American IPA is all about the hops. Dominated by citrus and tropical flavors from Amarillo, Azacca, Mosaic, and Motueka hops, this IPA remains smooth and easy drinking making it a great beer for everyday.
We're proud of our native heath’s and country’s history and culture: fairy tales and Russian epics, heroes and exploits. Our beer is inspired by Voronezh horror stories and Russian literature. Each type of beer is a story that we share with you.
The Bruery is a boutique craft brewery located in Orange County, CA specializing in barrel aged and experimental ales. Founded as a small, friend & family run business in 2008, The Bruery takes its unique moniker from founder Patrick Rue’s family surname.
Patrick picked up homebrewing as a hobby, later to become an obsession, as a distraction to the banality of law school. Soon he was winning numerous awards for his beers and driving his wife, Rachel, mad with the messes that he would leave on the kitchen stove. Upon finishing school, he took it upon himself to draw up a business plan rather than study for the California Bar exam – a risky endeavor that shows through still today in the creative, genre-tilting beers that The Bruery prides itself on.
The Bruery is founded on the excitement that Patrick felt in those first years of homebrewing and we continue to strive for that same passion in every aspect of our business today. We never stop challenging ourselves to develop distinctive & imaginative beers, constantly pursuing improvement in all that we do. We brew dozens of original beers each year with our list of ingredients and inspirations growing perpetually. Our collection of oak barrels has also become a primary element of our brewery. Nearly half of our beer is aged in wine or spirit barrels bringing forth flavors reminiscent of the Belgian countryside or classic American distillers.
We greatly value our customers as well as our employees at The Bruery and want to give them all an impassioned way to spend their time while sharing a beer worth talking about.
We are a grassroots beer company fusing the craft of brewing with the inspired talents of emerging and seasoned artists, musicians, photographers and film makers. Our brewery is dedicated to promoting artists and raising the creative consciousness through the sociability of craft beer.

Moody Tongue Brewery opened in 2014 under the direction of acclaimed brewmaster Jared Rouben. Moody Tongue, a nickname for a guest with a discerning palate, features “culinary brewing,” Rouben’s original approach that combines the worlds of brewing and cooking through the application of a chef's mindset to the brewing process. Classically trained at the Culinary Institute of America in New York, Rouben worked in lauded Michelin-starred kitchens such as the Martini House in Napa, CA, and Thomas Keller’s Per Se in New York City before moving to Chicago to pursue a career in brewing. During the fall of 2016, Moody Tongue introduced a tasting room to its brewery in the Pilsen neighborhood of Chicago, serving year-round and limited-release beers in an intimate mid-century modern atmosphere with Michelin-minded service.
Mucho Talus™ HBC 692, or simply: Mucho Talus™. A DDH 6.5% IPA single hopped with the newly launched Talus™.
It’s a neomexicanus hop, a genetically distinct sub-species of hop that has been growing wild in the dry mountain regions of New Mexico for the last million years. Sister to Sabro with a different profile: grapefruit, stone fruit, woody, cream, notes that are great for IPAs. It’s the first time we are doing a single IPA with this hop. Get them while they are cold!
Special thanks to @yakimachief for bringing us all together.
JFor this west coast IPA we use the 2020 Pink Boots Blend, a mix of hops chosen by more than 100 PBS members during the 2019 Great American Beer Festival, contains Azacca, El Dorado, Idaho Gem & Loral. Creating a blend with tropical, citrus and piney aromatic qualities. We added some Ekuanot to give a more resinous character.
