Weaver Hollow is a brewery making slow and naturally fermented ales on an old creamery in the Catskill Mountains. We utilize the native mineral profile of our well water, along with a house mixed-culture—avoiding commercial yeast entirely—to produce beers that are truly reflective of the land around us.
